Method

1. Heat the coconut oil in a large frying pan and add the chicken & onions.

2. Add the cajun spice to the chicken, then add the pepper, chorizo, tomato purée, peas & chilli pepper & cook on a low heat for 5 mins.

3. Season the mix well, then add the rice (can be boiled rice or microwavable packs for convenience).

4. Leave to simmer for 2-3 mins before serving.

  • Tsp. coconut oil
  • 1 chicken breast
  • 50g chorizo, sliced
  • 1 red pepper
  • 1 medium red onion
  • 1/2 cup peas
  • Tbsp. Cajun spice
  • Tsp. paprika
  • Tbsp. tomato puree
  • 250g cooked (80g raw) basmati rice
  • 1 red chill pepper (optional)
  • Salt and pepper
