Method

1. Chop the onion, peppers and pork loin into large chunks, finely slice the carrots, green beans, chorizo and chilli pepper, crush the garlic clove and add to a slow cooker with all the remaining ingredients. 

2. Cook on high for 4 hours or on low for 7-8 hours 

 

Serving suggestions

Low carbohydrate - Serve on its own.

High carbohydrate - Serve with choice of potato, rice or couscous.

  • 500g lean pork loin
  • 100g chorizo
  • 1 garlic clove
  • 1/2 red pepper
  • 1/2 green pepper
  • 400g tin chopped tomatoes
  • Tbsp. tomato puree
  • Small onion
  • Large handful spinach
  • Handful chopped green beans
  • 2 medium carrots, finely chopped
  • Tsp. basil
  • Tsp. oregano
  • Salt and pepper
  • 1 red chilli (optional)
