Sweet chilli chicken stir fry 🔥 👌🏻 This Sweet chilli chicken stir fry 🔥

👌🏻 This was one of the best things I’ve cooked in a while, and tbh I was quite surprised. 

Seriously, a rush throw it together job without any recipe guidance, ready in just 20 minutes. 

🥦 Stir frys are a fantastic quick meal to use up leftovers, eat the 🌈 and be really versatile to suit energy needs. 

👉🏻 Here’s what I did (roughly):

400g diced chicken breast
90g nest egg noodles 
1 medium onion, finely sliced 
50g broccoli, chopped 
1 carrot, peeled and finely sliced 
50g green beans, halved 
5-6 mushrooms, sliced
Pinch black pepper
Tbsp olive oil 
Sprinkle of chilli flakes (optional) 

Sauce: 
1-2 tbsp light soy sauce
3 tbsp sweet chilli sauce
1-2 tbsp honey
Tsp lazy garlic
Tsp ground basil
1/2 satsuma juice

Method
1. In a wok/large frying pan heat the olive oil over a medium heat. Cook the chicken through for 5 mins before adding the sliced onion and stir for 2 mins as it begins to soften. 
2. Stir in the carrots, broccoli and green beans. Simmer for 5 mins. 
3. Add the mushrooms and season with black pepper. 
4. In a jug mix together all of the sauce ingredients. 
5. Boil lightly salted water and add the nest of noodles, stir and simmer for 4 mins (or packet instructions). Whilst these are cooking stir the sauce into the wok and simmer over a low heat. 
6. Drain and noodles and add to the wok, mixing together well before serving. 
7. Sprinkle chilli flakes over the top to serve.

So I’ve had some time to reflect on my performance last night while driving to Santa Monica.
⠀
I’m not going to lie I was disappointed with coming 6th, I set such high standards for myself and demand the very best.
⠀
I then said to myself you’ve been doing hyrox for 7 months, and your competing with the best in the world at hybrid racing. This is absolutely true, and I should be extremely proud of my position.
⠀
Some unbelievable performances out there last night which is inspiring to be apart of.
⠀
I’m going all in on hyrox now and I’m really excited for next season, I’m going to train hard and give my all.
⠀
It was great racing with the American athletes, and finally meeting them all. Top lads.

Anyway, now some time to relax on the beach and switch off for a bit.

🏃🏻‍♀️ A mention must go to @kerrykins_runnergirl who ran an excellent race at @bostonmarathon Monday before last. The hardest race she’s ever ran! 

🚴🏻‍♂️ Unfortunately @neil__grant suffered significant mechanical problems during Etape Loch Ness sportive, but still managed a PB in the first stage, and missed a PB by 6 seconds in the second!!
