Sometimes you just can’t be bothered cooking so you want something that’s quick and easy but also nutritious.

🍝 Pasta is a great convenient carbohydrate option for athletes when energy needs are high, just add some quality protein and colour to complete the meal.

👇🏻 A few reasons why this could be a good option for you:

🏈⚽️ If it was game day today and you played a full game so need to replenish your muscle glycogen stores, or you’re playing tomorrow and need to carb load. Plus you want some comfort food.

🚴🏻‍♂️🏃🏻‍♂️ Long bike session today and need to refuel ready for tomorrow’s long run...

😋 You just fancy an indulgent bowl of pasta!!

👨🏻‍🍳 And best of all anybody can make a decent pasta dish in just 15-20 mins.

👨🏻‍🍳 If you’re looking for a really healthy and tasty dinner that’s quick and easy and minimal washing up, then this is for you!

A great option to feed the family or yourself and have leftovers for lunch the next day or two.

Cut some chicken breasts into chunks with a variety of colourful veggies into a baking tray. I used

🫑 Yellow and red pepper
🥒 Courgette
🍆 Aubergine
🍅 Cherry tomatoes
🧅 Red onion
🎃 Butternut squash (not pumpkin but you can use that in season!)

I also made a dressing so in a jug mix together
🍋 1/2 Fresh lemon juice & zest
🧄 2 tsp lazy garlic or fresh cloves
🫒 2 tbsp Olive oil
🪴 Dried oregano
🧂 Salt & pepper

Pour over the chicken and veg and mix together. Bake for 40-45 mins at 180.

🏃🏻‍♂️ If you need more carbs for after training then simply serve with some rice, couscous or potatoes.
