Halloumi, Avocado & Lime Salad

Method

  1. Slice the halloumi into thin strips. Add it to a pan on medium high heat and let it cook for a few minutes on each side until speckled golden.
  2. While the halloumi is cooking, plate your mixed salad leaves.
  3. Once the halloumi is done, add the seeds to the pan and cook for a couple of mins.
  4. Slice the avocado and add it to the salad with the halloumi
  5. Mince a garlic clove and add it to a mixing jug/bowl with the lime juice, balsamic vinegar, olive oil and whisk well.
  6. Pour it over the salad and top with the toasted pumpkin seeds.

100g halloumi cheese

1 avocado

2 large handfuls mixed salad leaves

tbsp. pumpkin seeds

1/2 lime juice

tbsp. olive oil

1/2 tbsp. balsamic vinegar

1 garlic clove (or tsp. lazy garlic)
